The special Potato Vindaloo or Aloo Vindaloo at New India Restaurant is a vegetarian version of the most famous spicy Goan curry – Pork Vindaloo.
Potato vindaloo is made with boiled potatoes that have been marinated in the great Indian herbs, spices, and garam masala and then sautéed until the masala has been nicely incorporated with the potatoes.
Despite the fact that the word aloo () means potato in Hindi, traditional Goan vindalho does not contain any potatoes because the name is a corruption of a Portuguese phrase with no Hindi etymology.
