The special Potato Vindaloo or Aloo Vindaloo at New India Restaurant is a vegetarian version of the most famous spicy Goan curry – Pork Vindaloo.  Potato vindaloo is made with boiled potatoes that have been marinated in the great Indian herbs, spices, and garam masala and then sautéed until the masala has been nicely incorporated with the potatoes.  Despite the fact that the word aloo () means potato in Hindi, traditional Goan vindalho does not contain any potatoes because the name is a corruption of a Portuguese phrase with no Hindi etymology.  What Should You Serve With Vindaloo?  Bread made from naan.  Rice from India, basmati.  Potatoes.  Chappatis.  QUESTIONS AND ADVICE FOR MAKING THE BEST VINDALOO  Is there gluten in aloo vindaloo?  Yep!  It most certainly is!  How long can I keep aloo vindaloo in the refrigerator?  Aloo vindaloo can be kept in an airtight container for three days.  Is it possible to freeze aloo vindaloo?  Vindaloo curry paste freezes well, so make the sauce ahead of time and freeze it.  The potatoes should not be frozen.  Simply boil them, then add them to a saute pan with the defrosted vindaloo paste and heat through.
